Why am I so glad Stefan was wrong?

A vinagrette in fact is an emulsion ... the definition of an emulsion is the mixture of a "fatty" substance and a light liquid substance : water/oil or milk/cream
I would love to know what, other than binge drinking, started such a stupid argument!
But I thought an emulsion had to actually hold, to form a new consistency: i.e. mayonnaise. A viniagrette seperates so it's not an emulsion, no?Fabio wins sexiest TC contestant ever. Damn.
More important than "is a vinaigrette an emulsion" is...Did that Beef Carpaccio qualify as Nouvelle American? or just Nouvelle Italian?
