Brian's Song

Gale Simmons: "I'd like to say a few words about a chef I know, an acquaintance of mine. His name is Brian Malarky, and he has the heart of a Top Chef and that rare form of cooking which allows him to fool himself and his judges -- fish. He has a mental attitude which makes me wary to know a chef who spills out "seafood," 24 hours a day, every day of his life. Now, you flatter me by giving me this position of power. But I say to you here and now, Brian Malarky is a man of many hats yet limited recipes who could receive the Top Seafood Chef award. It's my decision tonight and Brian Malarky's tomorrow. I love Brian Malarky’s fish. And I'd like all of you to love his fish, too. And tonight, when you hit your knees: please ask God to love his fish."
And for those of you who didn't get the movie reference...a real "song"!

I like to cook yes, yes, right between my sink and fridge
On a stove of heat I saute in the pan
Any meat meat that’s not on land
Cooks well, fries, sears, to the plates away from here
Well, I don't know why I was maligned
It’s ok cause I’m going home
On a magic carpet ride
I don't know why they cut me
Why don't I go down to the sea
Calamari will set me free
Close your eyes Gail
Look inside Gail
Let the taste take you away
Last night I held a Top Chef chance
And so I wished that I could stay
Before the win could go to me
Well, Padma came and took the knives away
I looked around, a lousy trout was all I found
Well, I don't know why I was maligned
It’s ok cause I’m going home
On a magic carpet ride
I don't know why they cut me
Why don't I go down to the sea
Sashimi will set me free
Close your eyes Gail
Look inside Gail
Let the taste take you away
On a stove of heat I saute in the pan
Any meat meat that’s not on land
Cooks well, fries, sears, to the plates away from here
Well, I don't know why I was maligned
It’s ok cause I’m going home
